Baked Cottage Cheese and Capsicum Bread Rolls

Creamy soft texture of cottage cheese with bits of crunchy peppery green pepper and you have a treat for your taste buds. 

Now that have tried potato filled bread rolls, it’s time to this give this old recipe a new twist. And this bread roll is baked so another reason to give it a try with a checkmark for eating heathy.

I have used homemade cottage cheese, but you may use ready made ones as well.

Also I have used cheddar cheese, but you may use any cheese – processed or even parmesan.

Ingredients
Serves 2

1. Bread slices – 6 or 8

2. Cottage cheese – 1/2 cup, grated

3. Green Capsicum – 2 tbsp, deseeded and finely chopped

4. Cheddar cheese – 1/2 cup, grated

5. Salt – 1 tsp or to taste

6. Pepper powder – 1/2 tsp

7. Red Chilli flakes – 1 tsp

8. Olive oil – 2 tbsp for brushing

9. Water – 1/2 cup for preparing the bread rolls

Method

1. In a bowl, mix together the grated cottage cheese, grated cheddar cheese, green capsicum, salt, pepper powder and red chilli flakes. Mix all the ingredients well.

2. Make small balls of the ingredients about the size of a small lemon.

3. Chop off the sides of each bread slice. Now place a slice and using a spoon spread water on both side of the bread slice. The bread slice should not be soaking wet but only well moist on both sides.

4. Place the bread slice on your palms and then place a cottage cheese ball in the center of the bread slice. Now bring all the edges of the bread towards the center while at the same time moulding it into a ball. Make a ball of the bread pressing the stuffing inside. Dab water to seal the ball. Prepare all the balls this way.

5. Now place the balls on a plate and cover with a foil. Refrigerate the prepared balls for at least an hour so as to firm them up.

6. Once ready to cook, pre-heat the oven at 200 degrees for 4 minutes.

7. Meanwhile, brush the bread rolls with olive oil on all sides. Place them in the oven and cook for 15 minutes. Then roll them over to the other side, brush with a little oil again and bake for another 10 minutes.

8. Serve the baked bread rolls with tomato ketchup.
