Quick and easy Toor dal

Ingredients
Serves 2

1. Toor dal – 1 cup

2. Water – as required

3. Clarified Butter (Ghee) – 2 tbsp

4. Coriander leaves – to garnish

5. Red chilli powder- 1 tsp

6. Turmeric powder (Haldi) – 1/4th tsp

7. Cumin seeds (Jeera) – 1 tsp

8. Asafoetida (Hing) – 1/2 tsp

9. Salt – 1 tsp or to taste

Method

1. Wash the toor dal in water several times. Then soak it in 2 cups of water for about 1 hour. Drain all the water after an hour, and place the toor dal in a pressure cooker. Add water – just till about 1 cm above the dal.

2. Add the turmeric powder (haldi) and red chilli powder and salt.

3. Close the lid of the pressure cooker and cook the dal for 2 whistles on high heat. Then lower the heat and continue to cook for another 10 minutes.

4. Once the steam of the pressure cooker is down open the lid. Now using a hand held blender, blend the dal to a smooth paste. You can even use a wire whisk. The dal should be like a puree. Add more water if you want a thin gravy.

5. Now heat the ghee in a saucepan.

6. Once the ghee is hot, add the cumin seeds (jeera) and asafoetida (hing)and let it crackle for a few seconds.

7. Now add the dal into the saucepan and mix well. Give the dal a boil and then garnish with chopped coriander leaves.

Serve with rice or roti.
