1. Green/ yellow Zucchini – 1
2. Cottage cheese – 200 gms
3. Olive oil – 2 tbsp, for brushing
1. Extra virgin Olive oil – 2 tbsp
2. Salt – 1 tsp
3. Pepper powder – 1/2 tsp
4. Lemon juice – 1 tsp
5. Mustard paste- 1 tsp
Chop the zucchini into cubes. Chop the cottage cheese into cubes.
Pre-heat the grill in the OTG or contact grill. Brush oil on the contact grill plates if you are using it to grill.
Brush some oil on the cubed zucchini and cottage cheese pieces.
Place the cubed zucchini and cottage cheese on the hot contact grill / Spread them out in a flat tray and place in the OTG. Grill for about 5-10 minutes.
To make the vinaigrette – mix together 2 tbsp oil, lemon juice, mustard paste, salt and pepper powder. Whisk well to blend the mustard well into the oil.
To serve, spread the vinaigrette generously on the grilled zucchini and cottage cheese cubes. You may also serve the vinaigrette on the side.
