A super easy recipe for vanilla custard. And one thing for sure – once you make this recipe – you will know how easy it is to make custard and how much better it taste than the powder mix one.
This recipe is made using 2 eggs and the all measurements make a thick pudding-like consistency. If you want to make it more runny, then you can add some more milk.
1. Milk – 4 cups (600 ml)
2. Sugar (granulated or castor sugar) – 1/2 cup to 3/4th cup, depending upon your liking of sweetness.
3. Eggs – 2
4. Cornflour – 2 tbsp
5. Vanilla Essence – 1 tsp
6. Fruits – Mangoes, apples, banana, chopped
Take a heavy-bottom gas-proof utensil, big enough to hold all the contents. (I use a heavy bottom steel bowl with a handle). In the bowl, beat the eggs well using a hand held whisk.
Next add in the vanilla essence and beat well.
Add the corn flour and sugar and mix well.
In another bowl, pour the milk and place the milk to heat up. The milk should be hot enough that you cannot stick a finger in it without burning, but also the milk should not be boiling.
Now, remove the milk from the gas stove. Next you need to add the milk into the egg mixture very very slowly. It has to be poured like a thin stream into the egg bowl and all the while you need to keep moving the whisk vigourously. This is the most important part as the milk is hot, and if you do not whisk continuously or pour in the milk very slowly, chances are the egg will start to cook and form tiny egg pieces. We do not want that. So 2 things you have to be sure of – 1. The milk has to be added very slowly and 2. the whisking has to be continuous and vigourous.
Once all the milk is added in to the egg bowl, then place the bowl on the stove. Keep stirring, while keeping the heat to medium high.
Once the mixture starts boiling, it will start to get thickened. Continue to whisk to prevent the custard from sticking to the bottom of the pan. Lower the heat and continue to cook for 2-3 minutes. Here if you like it to be more runny, you can add in more milk, but the milk has to be hot milk.
Pour the cooked custard in to a clean serving bowl. Allow it to cool to room temperature.
Add in the chopped fruits.
Serve warm or chilled.
