Drumstick Sambhar

Ingredients 

1. Toor Dal – 1 cup, washed and soaked for 1 hour

2. Drumsticks – 8-10 two inch sticks

3. Tomato – 1 large, finely chopped

4. Onion – 1 large, finely chopped

5. Ginger – 1 inch piece, grated

6. Garlic – 2-3 cloves, crushed finely 

7. Green Chillies – 2-3, finely chopped

8. Kadi Patta – 8-10 leaves

9. Whole red chilli – 1-2

10. Turmeric powder – 1/2 tsp

11. Mustard seeds – 1 tsp 

12. Asafoetida – a pinch

13. Sambhar Powder – 2 tsp 

14. Tamarind paste – 3-4 tbsp 

15. Sugar – 1/2 tsp 

16. Salt – 1 tsp or to taste

17. Oil – 2 tbsp 

Method

1. Place the soaked toor dal in a pressure cooker along with 2 cups of water and turmeric powder. Allow to cook for 3-4 whistles. Let the steam release and them open the pressure cooker. If you are cooking dal in the instant pot then cook on High pressure for 10 minutes. 

2. While the dal is cooking, take a saucepan and heat the oil.

3. Add the tempering to the hot oil – mustard seeds, asafoetida, whole red chilli and curry leaves. 

4. Now add the grated ginger, crushed garlic and finely chopped green chillies. 

5. Add the onions and fry until the onions are golden brown. 

6. Add tomato and mix well. Cover the pan and cook until the tomatoes are soft. 

7. Add the drumsticks and 1/2 cup of water. Let the water come to a boil. Then cover the pan and cook for 10-15 minutes on low heat 

8. Add sambhar powder, tamarind paste, salt and sugar and mix well. 

9. Now add in the boiled dal and mix well. Bring the dal to a good boil, then lower the heat and simmer on low heat for 15 minutes. Stir often and add more water if the dal is getting too thick. 

10. Check the seasoning and serve.
